I've had similar problems with Red Hat (Fedora). On varying machines too.
First, is it hard disks that are not being found or the CD (DVD)?
The problems I've found (intermittently) have to do with finding the
installation DVD -- the machine will boot the DVD and then 'forget' that
its there and declare inability to find the installation medium. It's
an intermittent problem -- reboot, start over, and after a couple times
it will 'catch'. No idea why...
I have not experienced problems with inability to find the destination
hard drive though.
I'd suggest pulling a different OS and see if you get the same problem.
Puppy is my personal favorite -- if it can't find your hard drive
either, then you have a hardware problem.
